Guacamole is always a crowd pleaser. I love this combination of the sweet mangos and the spicy jalapeño wrapped in avo goodness. Enjoy this guacamole with chips, on toast, tacos, wherever your guacamole dreams take you.
Sweet and Spicy Mango Guacamole
Ingredients:
2 Ripe Avocados
1/2-1 ripe mango diced
1 small jalapeño de-seeded and minced (leave some seeds if you like some extra heat)
Juice of 1 large lime
1/2 tsp cumin
1 tsp Himalayan sea salt
2 Tbsps Hemp seeds
Directions:
1. Cut avocados in half and take out the pit. Scoop out avocados and mash with back of fork. You want it to still have some texture. Set mashed avocado aside in a bowl.
2. Dice up mango and jalapeño. Save a little of each to top guacamole. Gently fold mango and jalapeño into avocado.
3. Add lime juice, cumin, salt and combine.
4. Transfer to serving bowl and garnish with extra jalapeño, mango and hemp seeds
5. Serve with your favorite tortilla chips. I am a huge fan of the Garden of Eatin’s Yellow Corn Tortilla Chips and Late July’s Sea Salt & Lime Chips.
