I love picking fruit, strawberries, blueberries, apples, you name it I am there. There is something very comforting and zen about the experience for me. I really love seeing where my food comes from and the experience you make when picking it yourself. I usually go a little overboard when picking fruit. Strawberries when picked in season have the sweetest candy like quality. It baffles my mind how much added sugar is put into store bought jams. This recipe is the perfect amount of sweetness, plus the chia seeds will give you lots of good omega-3s, fiber, antioxidants, calcium and iron. I love this jam on toast with almond, cashew or peanut butter. Top it with sliced bananas and hemp seeds.
Strawberry Chia Jam Toast
Ingredients:
1 Cup Fresh or frozen strawberries
1-2 Tablespoons of Maple Syrup
2 Tablespoons of Chia Seeds
Directions:
1: If you are using fresh strawberries trim the greens and slice in half.
2: Place fresh or frozen strawberries in a small sauce pan over med-low heat.
3: Once softened add the maple syrup.
4: Use a potato masher or the back of a fork to crush the soft fruit and let cool.
5: Once cooled place fruit into a mason jar and stir in chia seeds.
6: Refrigerate overnight and enjoy for up to a week.
