Dragonfruit Smoothie Bowl

If you aren’t familiar with dragonfruit or pitaya it is part of the cactus family. It has a mild flavor similar to a kiwi. The fruit usually comes in two colors: a white with black seeds or a deep magenta hue. That deep magenta tone makes my heart swoon.

Smoothie bowls are the perfect warm weather breakfast. They will instantly cool you down while nourishing you with natures nutrients. I love, love the natural color from the dragonfruit. The recipe is very flexible so feel free to substitute frozen mango or pineapple if you can’t get your hands on jackfruit at the moment.

Dragonfruit Smoothie Bowl

Serves 1

Ingredients:

1 packet of Pitaya Plus or 1/2 cup frozen pitaya

1/2 cup frozen Pineapple

1/2 cup frozen ripe jackfruit

1 banana

1/4 cup coconut milk add a extra Tbsp at a time if the mixture is too thick.

Directions:

Toss all ingredients in a high speed blender. I live for my Vitamix. Serve in your favorite bowl or mason jar. Layer in granola and top with fresh fruit such as mango or blackberries. Sprinkle on some shredded coconut and hemp seeds.
